Carnitas Tacos are one of my all time favorites. I miss having them at Tex Mex restaurants. So when I stumbled across the gem of a recipe, I was thrilled to give it a try! I’m delighted to report, it’s every bit as good as the dining out experiences I remember. And did I mention that this is made….you guessed it…in the crock pot? This recipe is perfectly allergen free in its original state. I did not have to convert a thing….well one tiny thing. Don’t use vegetable oil…that is soybean oil and is off limits. Use Canola oil. The rest is golden.

To go with this tasty meat, I simply cut up lettuce, onions, avocados, cilantro…whatever you have will do! Then I made a quick green sauce to ladle on top of each taco.
2 T Chopped Onion
1 T Olive Oil
1/3 Cup Water
2 T Fresh Cilantro
1/3 Green Tomato
1 tsp Salt
1 Clove Garlic
1 Jalapeno Pepper, Seeded
Process all ingredients in blender or food processor until smooth, and you are done.
Bring your appetite. You’ll want seconds.
