I am so full of joy that it’s the Christmas Season. I would normally be baking warm goodies, but when the temperature reaches into the mid 70s in December, my boys want ice cream. It could actually be snowing outside, and they still would, but that’s not the point.
It so happens that I have a very simple ice cream recipe that is a hit every time in my arsenal of goodies.
In a high speed blender, liquify the following:
1.5 cups of So Delicious Coconut Milk – Original Flavor.
1 can full fat coconut milk
1 bag of frozen cherries – 12 oz
3/4 cups granulated sugar
2 teaspoons gluten free vanilla extract
Once completely smooth, poor into favorite ice cream maker and follow the manufacturer’s directions. You can eat immediately upon completion if you like soft serve.
I prefer to freeze mine for a few hours to harden into something that can be scooped onto our favorite cones by Goldbaum’s.
You can use allergen free sprinkles, but my boys prefer these as is!
