As we near the Valentine’s Day, I’ll be sure to include a few class room treats that will delight the gluten, dairy, soy and/or egg free student, as well as satisfy the student blessed to be allergic to absolutely nothing. 😉
This is one of the holidays I tend to go a bit overboard. It’s because I don’t want my kids to feel left out. It’s bad enough I must sort through their Valentines and throw out the food offenders, but it’s even worse for them to be left sitting without a treat in the middle of a classroom party. So I’m going to make sure they are all Valentined up. Each year, I send in classroom treats for the party…AND I make sure to have treats on hand to add back into their sweet little crafted goodie bags that hold their class Valentines once they come home and I have to start the sifting process. Even my 12 year old gets the blues when I have to start throwing out Hershey Kisses and foil wrapped chocolate hearts. They will not be left empty handed. So starting today, let’s turn our attention to what we CAN do.
Rice Krispies are unfortunately not gluten free, but we do have a worthy and healthy substitute! Erewon Crispy Brown Rice Gluten Free Cereal. I’ve mentioned previously that I use Campfire Marshmallows because of their verification to be gluten, dairy, egg and soy free. And the butter I use is Earth’s Balance Soy Free Spread.
The rest is just the old fashioned recipe you’ve probably used before you knew about food allergies.
1/4 cup Earth Balance Soy Free ‘butter’
4 cups miniature marshmallows
5 cups of Erewon Crispy Rice Cereal
- Heat ‘butter’ and marshmallows in microwave for 2 minutes in large, microwavable bowl. Stop and stir to combine. Heat for 1 additional minute.
- Add cereal to bowl and stir to combine.
- Use a ‘buttered’ spatula to press mixture into 13 x 9 x 2-inch pan coated with your Earth balance spread. NOTE: Do not use cooking spray. Most have soy.
- Cool. Cut into desired length squares.
Just as good as the original!
