Happy Saturday! We finally made it. Only one more week of crazy before school gets out for the holidays! It’s time to relax.
I cannot usually enjoy a margarita at restaurants because the mixes often contain gluten and/or soy. Tequila’s dangerous enough, I sure don’t need an allergen infraction on top of it. But this recipes is positively delicious…and fool proof.
1/2 cup freshly squeezed lime juice
1/2 cup sugar
1/2 cup water
2/3 cup tequila
1/4 cup Cointreau
Combine the first three ingredients in measuring cup and mix well with fork until sugar is dissolved. Pour in blender. Add next two ingredients and then fill rest of pitcher with ice. Blend until smooth. Pour in salted margarita glass.
